Care Home in Bournemouth Chef turns Christmas leftovers into a real feast!
Over more than a decade Phil Etheridge’s culinary reputation soared at some of Dorset’s finest restaurants.
However, after lifting standards in the kitchens – sometimes in tandem with his brother Greg – at such renowned establishments as Shell Bay Seafood Restaurant, Studland, the Ship in Distress, Christchurch, and the Rising Sun, in Poole, Phil, 38, is now focusing all his culinary passion and expertise on the residents at Branksome Heights luxury care home in Bournemouth.
What is it like being head chef at a care home over the festive period?
Our residents love tradition at this time of the year and we started off the festivities with a Victorian Christmas celebration. On Christmas Day itself we will be having a traditional roast turkey and I’ll be making a chestnut and apricot stuffing with pigs in blankets and all the trimmings.
For pudding, there will be a sherry trifle. On Boxing Day I’ll be offering our residents something totally different, sausages and bubble and squeak, which they love!
How will you keep your residents yearning for more in the New Year?
We are already planning some fun theme night such as a curry night, Chinese night and a Hollywood night – when we will even be handing out Oscars!
